Easy to make, easier to
eat!
Ik
zou het niet beter kunnen zeggen. Dit soepje is een uitdaging voor de tong en
kan wel wat traantjes veroorzaken, maar de explosie van smaken is het waard. Ik
raad een kleine portie aan tenzij je al wat trappen van de Scoville-schaal hebt
betreden.
Het recept
The Recipe
Bak de shi-take and sjalotjes in het mengsel van sesamolie en
olijfolie. Voeg
de currypasta toe. Roer en laat een paar seconden bakken tot het een zalige
geur vrijgeeft. Voeg dan de kokosmelk toe en laat het 3 minuutjes koken.
Gently cook the shii-takes and shallots in the blend of sesame oil and olive oil.
Add the curry paste.
Stir and cook it for
a few seconds. Then add the coconut milk and let it cook for 3 minutes.
Voeg de kippenbouillon
toe en breng de soep op smaak met vissaus. Verwarm ondertussen een pan op hoog
vuur. Doe er olijfolie in en bak de kippenblokjes tot ze gaar zijn.
Add the chicken stock and season the soup with fish sauce.
Heat a pan on
a high heat. Brush with a thin layer of olive oil and toast the chicken cubes
until well done.
Maak de rijstnoedels
klaar volgens de gebruiksaanwijzing. Verdeel over de soepkommetjes, giet de
hete soep erover en strooi de kippenblokjes erover.
Soak the rice
noodles in warm water and transfer them to soup bowls.
Pour over the hot
soup and toss the chicken cubes on top.

100g kipfilet, in kleine

50g shi-take, in schijfjes
2 sjalotjes, in ringen
1 el sesamolie
1 tl + 1 el (voor de
kip) olijfolie
1 el rode currypasta
150ml kokosmelk
500ml kippenbouillon
3 el vissaus
100g rijstnoedels
100g chicken fillet,
in small cubes
50g shi-take, sliced
2 shallots, in rings
1 tbsp sesame oil
1 tsp + 1 tbsp olive
(for the chicken) olive oil
1 tbsp Thai red
currypasta
150ml coconut milk
500ml chicken stock
3 tbsp fish sauce
100g rice noodles
